Aloo Ki Tikki-- Recipe

Ingredients:-
• Potato,boiled and mashed------------ 6 medium

• Salt --------------------------------------- to taste

• Olive oil +deep fry----------------------------- 1 tablespoon

• Onion ,chopped ---------------------------------- 1 medium

• Cottage cheese (paneer),grated-------------------- 1/4

• Fresh coriander leaves,chopped ---------------- 1/4 cup

• Cashewnuts,crushed ------------------------------- 6-8

• Red chilli powder ------------------------------------ 1/2 tablespoon


Method:-
First of all boil the potatoes, check them until it soft. Then peel all the potatoes. You have to mash up all the potatoes completely. After you have mashed it add the spices, onions, cilantro, and chilies and add onion, ginger, fresh coriander leaves and lemon juice. You can use olive oil for good and healthy taste. Now mix all the mixture well. Now its time to form the mixture into small shape round and press with soft hands. Stuff each portion of mashed potato with a portion of the paneer mixture. Roll and shape into tikkis (roundels) of approximately two-inch diameter and half-inch thickness. Now heat oil in a open pan where you can deep fry the tikkis. Dip the round into the batter and fry few minutes on each side, until it turns golden brown.

Note:
Boil potatoes until fork-tender. Preferably, potatoes should be boiled well in advance before use. It would be better if they can be refrigerated for a short time.
